CABBAGE SOUP
On New Year’s Day, Russian families and their guests enjoy a variety of delicious foods. Let your children celebrate the new year by helping to make this Russian favorite soup.

Bring a pot of beef broth to a boil. |
|
Then shred some cabbage and slice a few carrots and a bunch of green onions. |
|
Add the vegetables to the broth and salt to taste. |
|
Cover and simmer for about 40 minutes or until the vegetables are tender. |
|
Pour the soup into small bowls and top with spoonfuls of plain yogurt, if desired. |
|
Serve with slices of a dark hearty bread.

MOCK CHAMPAGE
|
12 oz. can of apple juice concentrate. |
|
32 oz. bottle carbonated soda (club soda). |
|
24 oz. water (4 cups) |
|
Stir above ingredients together in a pitcher. |

NUTS & BOLTS |
|
3 cups bite-sized shredded wheat. |
|
1 cup bite-sized rice chex. |
|
1/3 cup melted margarine. |
|
1 ½ cups stick pretzels (break in half). |
|
1/2 cup raisins |
|
½ cup M & M’s |
Spread shredded wheat and rice checks out in a cake pan. Cover with melted margarine and sprinkle on some garlic powder or salt. Bake at 350 degrees for 15 minutes. When cool, mix with other ingredients. Keep in an airtight container before serving.

EGG NOG
Blend together in a blender.

1 egg |
|
1 cup milk |
|
1 Tbsp. softened cream cheese |
|
½ peeled and sliced banana |
|
2 drops vanilla, dash of cinnamon |
|
CHEESE PUFFS
|
1 cup grated cheese |
|
1 cup cottage cheese |
|
1 cup flour |
|
¼ tsp. salt |
|
¼ cup milk |
Stir together and refrigerate about 15 minutes. Have your children roll the dough into small balls and place them on a greased cookie sheet. Bake 12 minutes at 400 degrees. Make approximately 24 cheese puffs.

CARROT BALLS
|
3 oz. pkg. cream cheese softened |
|
½ cup finely shredded cheddar cheese |
|
1 Tbsp. apple juice concentrate |
|
1 cup direly grated carrots |
|
½ cup finely chopped walnuts |
Cream together the first three ingredients. Stir in the carrots. Then roll into small balls and roll in the chopped walnuts. |
