COOKING WITH PUMPKINS

PUMPKIN SEEDS (To be eaten shelled)
Clean out a pumpkin and save the pumpkin seeds.
Soak the seeds in salt water (1 Tbsp. per 1 ½ cup water) for 1 hr.
Drain the seeds and spread them on a cookie sheet.
Bake at 350 degrees.
Stir often to help them dry.
Show your children how to split and crack the seeds.
 
PUMPKIN SEEDS (To be eaten with shell on)
Clean out a pumpkin and save the pumpkin seeds.
Place seeds in a bowl with some vegetable oil and salt.
Stir to coat the seeds, then place the seeds on a cookie sheet.
Bake at 375 degrees for approximately 15 -20 minutes.
Stir often to help them brown and not stick.
 
PIONEER PUMPKIN PUDDING
Clean out the insides of a pumpkin.
Fill the pumpkin with milk and a little honey.
Bake at 350 degrees until the milk is absorbed into the pumpkin.
Let pumpkin cool a bit and then cut it into chunks to serve.
 
EASY PUMPKIN PUDDING
Follow the directions on a package of vanilla pudding.
Stir in ½ cup of pumpkin pie mix.
Stir and eat.
This is a great recipe to let your child help you make.
 
BAKED PUMPKIN
Clean out a pumpkin and dry it out.
Put in 2 Tbsp. butter and 2 Tbsp. honey.
Add some salt and some cinnamon
Bake on a cookie sheet at 350 degrees.
Bake for 40-60 minutes until soft.
 
BAKED PUMPKIN CHUNKS
Clean out the insides of a pumpkin and pat dry.
Cut pumpkin into 4” chunks.
Top chunks with butter and brown sugar.
Bake on a cookie sheet at 350 degrees.
Bake until soft, approximately 40 minutes.
 
PUMPKIN OATMEAL
Prepare a pan of plain oatmeal.
Then stir in ¼ cup of pumpkin pie mix.
 
PUMPKIN SHAKES
Make your child a pumpkin milk shake.
Place in a blender, 1 cup milk, 1 peeled banana and some vanilla ice cream, plus ¼ cup of pumpkin pie mix.
Blend together for a refreshing pumpkin shake.
Variation: These can also be frozen to make pumpkin pops.
 
BAKED PUMPKIN WITH APPLE STUFFING
Clean and dry out a pumpkin.
Fill the pumpkin with your favorite apple/walnut stuffing mixture.
Replace pumpkin top.
Bake at 350 degrees for one hour or until the sides of the pumpkin are soft.
Serve the dressing and soft pumpkin together.
